Caramel Popcorn Recipe

One word:  Wow.
Another three words:  Best Popcorn Ever.

Ingredients
1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
5-7 quarts popped popcorn

Directions
1. Preheat oven to 250 degrees F. Place popcorn in a very large bowl or multiple bowls.

2. In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.

3. Place in large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.

4. Store in an air tight container and eat slowly over multiple days…or give to your skinny friends.

Blooming Salsa Recipe

I used to work with a woman who would bring this salsa to every company event or social gathering. It was her secret family recipe and I’m excited to share it with you. This salsa has a smooth flavor and is one of my favorites…

1 can Mexicorn – drained
1 can black beans – drained
2 avocados – chopped
3 tomatoes – chopped
1 small to medium red onion – chopped

1/4 cup olive oil
1/4 cup red wine vinegar
1 package Good Seasons Zesty Italian dressing
1/4 to 1 tsp Cumin (according to taste)

Mix everything together. Put in Fridge. Better if it sits for a while for the flavors to blend. Eat and Enjoy.
